Asparagus with herb spread

  • One bunch of fresh asparagus
  • 50g Benecol Light or Buttery Taste
  • Fresh parsley
  • Fresh chives
  • Ground black pepper
  • Squeeze of lemon juice
  • Ground black pepper
  1. Make the herb spread first. Chop the parsley and chives and then blend the chopped herbs and Benecol spread together in a small bowl. Add some black pepper to the mixture according to your own taste. Put the herb spread in the fridge while you cook the asparagus.
  2. Clean the asparagus with water and cut off the white parts from the stems. Cook them in simmering water for about 5 minutes until they are tender. Drain and then transfer them to a serving platter.
  3. Put a spoonful of the herb spread on top of the asparagus. Squeeze a little lemon juice and sprinkle a little black pepper on top.
  4. Enjoy some delicious seasonal food!
